  1. Wash and thoroughly drain the fish

  2. Marinate with salt, turmeric powder, and mustard oil for 10–15 minutes

  3. Heat a round-bottom kadai until lightly smoking

  4. Add mustard oil and heat until shimmering

  5. Spread oil around the kadai using a khunti

  6. Slide the fish gently into the oil instead of dropping it

  7. Fry on medium-high heat for 2–3 minutes on the first side

  8. Flip only when the fish naturally releases from the surface

  9. Fry the second side for another 2–3 minutes until golden

  10. For the optional finish, remove most of the oil and fry onions and green chillies until golden

  11. Add the fish back and fry until extra crispy

  12. Serve hot with steamed rice and dal
