  • Egg Mixture (Per Roll)

Cooking method

  1. Dough Preparation

  2. Mix maida, salt, sugar and ghee

  3. Gradually add warm water and knead into a smooth dough

  4. Rest for 30 minutes

  5. Layer Creation

  6. Roll the dough into a circle

  7. Cut from the edge to the centre

  8. Apply ghee and dry maida evenly

  9. Roll into a cone

  10. Press into a dough ball

  11. Rest again for 15–20 minutes

  12. Rolling

  13. Roll into a medium-thin laccha paratha

  14. Dry Roast

  15. Cook both sides briefly on a dry tawa to remove excess moisture

  16. Frying

  17. Add oil and fry until golden brown and flaky

  18. Egg Layer

  19. Spread beaten eggs on the tawa

  20. Season with salt and white pepper

  21. Place the paratha over the egg

  22. Perform the traditional Kolkata egg flip

  30. Roll tightly
