Ingredients

  • Fish Marination

  • Mustard Paste

  • Final Marinade

  • For Steaming

Cooking method

  1. Phase 1 — Fish Preparation

  2. Clean and pat the hilsa dry

  3. Marinate with salt, turmeric and mustard oil

  4. Rest for 15–20 minutes

  5. Phase 2 — Mustard Paste

  6. Soak the yellow and black mustard seeds in cold water for 15–20 minutes and drain completely

  7. Grind the soaked mustard seeds with cashews, green chilli and ice cubes (or cold water) until smooth

  8. Add the grated coconut and grind briefly until incorporated

  9. Do not strain the paste

  10. Phase 3 — Marinade

  11. Mix the mustard paste with curd, sugar and mustard oil until smooth

  12. Taste and adjust seasoning if required

  13. Coat the marinated fish evenly

  14. Phase 4 — Steaming

  15. Spread a thin layer of mustard paste in a steel container

  16. Arrange the fish pieces and cover with the remaining paste

  17. Top with slit green chillies and mustard oil

  18. Seal tightly and steam over medium heat for 20 minutes

  19. Rest for 5 minutes before opening and serving
