A Bengali Comfort Classic

Patla Macher Jhol is one of the most iconic everyday Bengali meals. Unlike rich restaurant-style fish curries, this light and comforting jhol relies on balance rather than heavy spices. With lightly fried fish, potatoes, green chillies, and a thin flavorful broth, it’s the kind of meal that makes you reach for an extra serving of rice.

Ingredients

Method

  1. Marinate the fish with salt and turmeric and rest for 15-20 minutes
  2. Heat mustard oil until smoking and lightly fry the fish until golden
  3. Remove and keep aside
  4. Fry the potatoes in the same oil with a little salt and turmeric until lightly golden
  5. Add kalonji and green chillies
  6. Add turmeric, red chilli powder, and cumin powder
  7. Immediately add a splash of water and cook until the spices bubble smoothly
  8. Add tomato and cook until softened
  9. Pour in hot water and bring to a simmer
  10. Add the potatoes and cook for 6-8 minutes
  11. Gently add the fish pieces and simmer for 4-5 minutes
  12. Avoid excessive stirring to prevent the fish from breaking
  13. Cook until the jhol is thin, light, and slightly glossy
  14. Serve hot with steamed rice
