Ingredients
Laccha Paratha Dough
- 300 g maida
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp ghee
- 170–190 ml warm water
Layering Mix
- 3 tbsp ghee
- 2 tbsp maida
Egg Layer (Per Roll)
- 2 eggs
- Pinch salt
- Pinch white pepper
Common Chicken Marinade
- 500 g boneless chicken thigh
- 100 g thick curd
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp Kashmiri chilli powder
- 1 tsp red chilli powder
- 1 tsp roasted cumin powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp black pepper powder
- 1 tsp salt
- 1 tbsp mustard oil
- 1 tbsp lemon juice
Tawa Chicken
- Half of the marinated chicken
- 1 tbsp oil
- 1 medium onion (sliced)
- 1 medium capsicum (sliced)
Kathi Chicken Additions
- 1 tbsp roasted besan
- 1 tbsp fresh cream
- 1 tsp crushed kasuri methi
- 1 tsp mustard oil
Kathi Chicken Final Toss
- 1 tbsp oil
- 1 medium onion (sliced)
- 1 medium capsicum (sliced)
Roll Assembly
- Egg-coated laccha paratha
- Chicken filling
- Raw julienne onion
- Finely chopped green chilli
- Lemon juice
- Chaat masala
- Tomato ketchup
- Green chilli sauce
Method
Chicken Marinade
- Mix chicken with curd, ginger paste, garlic paste, Kashmiri chilli powder, red chilli powder, roasted cumin powder, coriander powder, garam masala, black pepper, salt, mustard oil and lemon juice
- Divide the marinade equally into two bowls
Tawa Chicken
- Keep one half as the Tawa Chicken marinade
- Marinate for at least 2 hours
- Cook on high heat until lightly browned
- Add onion and capsicum
- Cook until the vegetables remain slightly crunchy
Kathi Chicken
- Add roasted besan, fresh cream, crushed kasuri methi and extra mustard oil to the second bowl
- Marinate for at least 4 hours
- Thread onto skewers
- Roast until lightly charred
- Rest for 5 minutes
- Chop finely
- Toss with onion and capsicum over high heat
Paratha Dough
- Mix maida, salt, sugar and ghee
- Gradually add warm water and knead into a smooth dough
- Rest for 30 minutes
Layer Creation
- Roll into a circle
- Cut till the centre
- Apply ghee and dry maida evenly
- Roll into a cone
- Press into a dough ball
- Rest again for 15–20 minutes
Rolling
- Roll into a medium-thin laccha paratha
Dry Roast
- Cook both sides briefly on a dry tawa
Frying
- Add oil and fry until golden brown and flaky
Egg Layer
- Spread beaten eggs on the tawa
- Season with salt and white pepper
- Place the paratha over the egg
- Perform the traditional Kolkata egg flip
- Cook until the egg is fully set
Assembly
- Add the chicken filling
- Top with raw julienne onion and chopped green chilli
- Season with lemon juice and chaat masala
- Apply tomato ketchup and green chilli sauce
- Roll tightly
- Wrap in paper
- Serve immediately
